Food for thought… (and Vision!)

Yes, we all grew up being told carrots will give us good vision- and that’s true…but why?  Carrots have vitamin A which is very important for eye health and the function of the retina.  In fact, though, there are many other nutrient-rich foods important for eye health.  Basically, the eye is a highly vascularized structure, so what is healthy for the cardio-vascular system is healthy for the eyes as well.  Also, in the retina, light is converted to electrical impulses and waste products are produced and need to be broken down by anti-oxidants.  Important nutrients include, of course, Vitamin A, but also Vitamin C, Vitamin E, Lutein, Zeaxanthin, Zinc, and Omega-3.
